For the Paneer:
- 250g paneer, cut into cubes
- 2 tablespoons cornflour
- 2 tablespoons all-purpose flour
- 1 teaspoon Wok & Roll Chilli Paneer Masala
- 1/4 teaspoon salt
- 2-3 tablespoons water (for marination)
- Oil for shallow frying
For the Stir-Fry:
- 2 tablespoons oil
- 1 tablespoon garlic, finely chopped
- 1 tablespoon ginger, finely chopped
- 2 green chilies, slit
- 1 medium onion, cubed
- 1 medium capsicum (green, red, or yellow), cubed
- 2-3 tablespoons Wok & Roll Chilli Paneer Masala
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1 teaspoon chili sauce (optional, for extra heat)
- 1 teaspoon sugar (optional, for a balanced flavor)
- 1/4 cup water or vegetable stock (for a saucy version)
- Spring onions, chopped, for garnish
Instructions:
1. Marinate and Fry the Paneer
- In a bowl, mix cornflour, all-purpose flour, Wok & Roll Chilli Paneer Masala, salt, and water to form a smooth batter.
- Add paneer cubes to the batter, ensuring they are well coated. Let them marinate for 10 minutes.
- Heat oil in a pan and shallow fry the marinated paneer cubes until golden brown and crisp. Remove and set aside on a paper towel to drain excess oil.
2. Stir-Fry the Veggies
- Heat oil in a wok or frying pan over medium heat.
- Add chopped garlic, ginger, and green chilies. Sauté until fragrant, about 30 seconds.
- Toss in cubed onions and capsicum. Stir-fry for 2-3 minutes, keeping the veggies slightly crisp.
3. Add the Masala Magic
- Lower the heat slightly and add Wok & Roll Chilli Paneer Masala, soy sauce, vinegar, and chili sauce (if desired). Stir well to combine.
- Add sugar for a touch of sweetness to balance the spice.
- For a saucy version, pour in water or vegetable stock and simmer for 1-2 minutes.
4. Combine the Paneer and Sauce
- Add the fried paneer cubes to the pan and gently toss them in the sauce until well coated.
- Let it cook for an additional 1-2 minutes to absorb the flavors.
5. Garnish and Serve
- Garnish the Chilli Paneer with chopped spring onions.
- Serve hot as an appetizer or with fried rice or noodles for a complete meal.
Pro Tips for Perfect Chilli Paneer:
- For a crispier paneer, use a shallow or deep fry method and don’t overcrowd the pan.
- Tofu can be used as a vegetarian alternative for added protein.
- Adjust the spice level by tweaking the amount of green chilies or chili sauce.
