Ingredients:
For the Chicken:
- 500g boneless chicken, cut into bite-sized pieces
- 2 tablespoons cornflour
- 2 tablespoons all-purpose flour
- 1 egg
- 1 teaspoon Wok & Roll Chilli Chicken Masala
- 1/2 teaspoon salt
- Oil for frying
For the Sauce:
- 2 tablespoons oil
- 1 tablespoon garlic, finely chopped
- 1 tablespoon ginger, finely chopped
- 2 green chilies, slit
- 1 medium onion, cubed
- 1 medium capsicum, cubed
- 2-3 tablespoons Wok & Roll Chilli Chicken Masala
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 teaspoon chili sauce (optional for extra spice)
- 1 teaspoon sugar (optional for balance)
- 1/4 cup water or chicken stock (for a saucy version)
- Spring onions, chopped (for garnish)
Instructions:
1. Marinate and Fry the Chicken
- In a bowl, mix cornflour, all-purpose flour, egg, Wok & Roll Chilli Chicken Masala, and salt to form a smooth batter.
- Add the chicken pieces to the batter, ensuring they are well coated. Let them marinate for 15-20 minutes.
- Heat oil in a deep pan or wok over medium-high heat.
- Fry the marinated chicken pieces in batches until golden brown and crispy. Remove and set aside on a paper towel to drain excess oil.
2. Prepare the Sauce
- Heat oil in a large wok or frying pan over medium heat.
- Add chopped garlic, ginger, and slit green chilies. Stir-fry until fragrant, about 30 seconds.
- Toss in cubed onions and capsicum. Stir-fry for 2-3 minutes, keeping the vegetables slightly crisp.
3. Flavor Explosion
- Lower the heat slightly and add Wok & Roll Chilli Chicken Masala, soy sauce, vinegar, and chili sauce (if using). Mix well to combine.
- Add sugar for a hint of sweetness if you prefer a balanced flavor profile.
- If making a saucy version, pour in water or chicken stock and simmer for 2 minutes.
4. Combine Everything
- Add the fried chicken to the pan and toss to coat it evenly with the sauce.
- Cook for 2-3 minutes, allowing the flavors to meld together. For a saucy version, let the chicken simmer briefly in the sauce.
5. Garnish and Serve
- Sprinkle chopped spring onions over the dish for a fresh, vibrant touch.
- Serve hot with steamed rice, fried rice, or noodles for a complete meal.
Pro Tips for the Perfect Chilli Chicken:
- For a vegetarian twist, swap chicken with paneer or mushrooms.
- Adjust the spice level by varying the amount of green chilies and chili sauce.
- Cook veggies quickly over high heat to retain their crunch and color.
